(1) Pretreatment of cocoa blocks and cocoa butter
Cocoa blocks and cocoa butter are solid raw materials at room temperature, so they must be melted before being mixed with other raw materials. The melting can be carried out in the heating and melting equipment such as the sandwich pot or the insulation tank, the melting temperature does not exceed 60℃, and the holding time after melting should be as short as possible, and should not be too long.
